I would never use this name. For one, the obvious connection is to Ernesto Guevara. People like to romanticize revolutionaries but before someone employs this strong a connection to him they ought to really look into what he did over the course of his life and understand him. Without really knowing what he was about it'd just be a fashionable alternative reference to use Che as a name.
That aside, it's not even a name. While it was HIS nickname, it came from an Argentinian expression/sound, not a real name.

The man made it a name. :-)
Scout is another example of a name being made... it was a nickname in a famous book, and took on a life of its own. In otherwords, it has become a name, with no etymology behind it other than the fact that it was the name of a famous revoultionist.

To me it seems ridiculous to use someone else's nickname if it's one that doesn't even stem from a real name. I see Che as being a credible name for the masses to use just as much as I'd think El Greco (nn turned name of 16th century painter Domenikos Theotocopoulos) or Baby (nn turned name of the character Frances in Dirty Dancing) would make good names, which is not at all.
Ooh, I really love it! It's uncommon, but not odd in the bad way.
