It is a name from Greek mythology. You get more hits with the spelling Euanthe. Apparently it's also a species of orchid which is nice. See here: http://en.wikipedia.org/wiki/Euanthe.
It would seem to be Greek from the elements Eu meaning good and anthe meaning flower. See, for example, Evadne and Calanthe.
I like it, it's quite unusual but not too out there.
