I have an ideaMy guess is that it's because Posy rhymes with Josie, and it was also probably influenced by the flower's name. It used to be common to change the first consonant of a nickname to make more nicknames (which is how we get Bill, Dick, Bob, Peg, etc.). So that could be what happened in this case too.
