I've always loved Mercy as a name for a girl, either on its own or as a nn for Mercedes.
I'm not particularly religious and I would use it. I don't think of religion when I think of the virtue mercy. Judges / juries grant mercy to defendants. Spouses forgive their cheating partners. People forgive people all the time. I don't see why mercy is an exclusively religious concept.
Mercy Hannah is my favorite from your list. It makes me think of a young woman in the American frontier in the 1800's. Mercy Lydia is a close second. Lovely combination.
