My vote is for Adeline. I've never really warmed up to Eveyln. :( But it does have cute nickname potential: Evie.
Adeline Charlotte is gorgeous, and though I like the name Lavender, Adeline Charlotte Lavender seems a bit too pretentious. A shorter second middle name would be nice and complementary, like Adeline Charlotte Rose or Adeline Charlotte Maria.
As for the one versus two middle names, I don't see a problem with having two middle names if they complement the other names instead of sounding like an obvious add-on.
Another combo that I think would be lovely (using your names) is Imogen Lavender Sofia or Imogen Sofia Lavender. Imogen Lavender and Sofia Lavender are pretty, as well.
