I love the sound of Edyta. But the spelling is something I'd have to get used to. It looks at first glance like a creatyv spelling, but I know it isn't. Edita doesn't help because it makes me think of the verb "to edit."
Anyway, Edyta is a valid, traditional spelling so it's me that's going to have to catch up. From your list, I love:
Edyta Penelope
Edyta Charlotte
Edyta Lorraine
Etta is so darn cute I could OK it as a nn for almost anything. It works very well as a nn for Edyta.
