No, I don't think it could work. Vanilla, at least to me, connotes boring or average. I think it would indeed sound a little trashy as a name. If used at all, it's probably best kept to the middle name position.

I agree... vanilla makes me think "bland." Also, food names in general tend to make me think "stripper name."
And now for some reason I have the urge to go buy Nilla Wafers...
