I would pronunce it LYE-kin, since the first syllable looks like the "lai" in "balalaika," one of my favourite words. And the LYE-kin pronunciation is hardly great--lichen is the flat stuff that grows on rocks.
If you really want to pronunce it LAY-kin, you'd do better to spell it Laken. That's streamlined, far easier to look at and spell, and less confusing with pronunciation. I'm still not a big fan of it--I prefer Larkin / Larken, like the character in Once Upon A Mattress--but it looks better as Laken.
Laken Georgia would be fine--I do like Georgia a bit. I'd be sure to use a feminine middle name, since I've seen Laken on boys, too.
