I don't really care for it. One of my least favorite letters in a name is G, and my own name is Kelsey, and I quite dislike it, so it makes sense that I don't like Gelsey either. Since most people aren't familiar with Gelsey, I do think they'll just think it's Kelsey or Chelsea when heard. And yes, I do find Chelsea dated.
