I've only ever heard
Sofia
and
Sophia
as So-fee-a, although I've heard it in a song as So-fie-a.

was pronounced with the short i sound, however, I've come across it and
Maria
before being pronounced with the long i sound in the
UK
and was curious.

Yes, I think those pronunciations are both obsolete here now.
