As the granddaughter, daughter and mother of a Beatrice, I've only ever heard the three-syllable BEE-a-tris version. My daughter has often been called BEE-tris, but never by English-speakers; she reports that it often sounds more like BEERtris, and though she's happy to be associated with the drink, she rejects it firmly as part of her name. She chooses to be called Bea, pronounced like the insect (and with that in mind, we gave her the family mns Elizabeth and Anne). My mother was the same. I've heard Bea pronounced like BAYa by German-speakers, which I like but it doesn't seem to fit comfortably into English sentences.
