I really like Sorin with a long i. It kind of gives it a presence that the short i pronunciation doesn’t have, and it avoids the trend for names to end in -en.
I’m not crazy about the “sore” part.
Sorin pronouced 'so-reen' puts it with names like Doreen, Eileen, Jolene, Maureen, etc. - it sounds feminine. Also it sounds a little like Sauron. So I'm not the biggest fan! I think you can get people used to just about any pronunciation, but I think the vast majority of people in the US would indeed say 'sor-in' without being given direction, and then would have to be corrected.
Also the 'ee' sound is a long e, not a long i. A long i would come out more like 'sor-ine'.

ohhhhh thank you for the correction! yes a long e then.
and that's a good point, especially considering i'm considering Irene as first choice for a kid or even myself. so it'd sound even more feminine next to that. which isn't a problem to me personally at all, other than bullying the kid may get or confusion. thank you for the input!
