Love it and have done so for a long time!
I think I became acquainted with the name through the Merlin trilogy written by James Mallory, which I picked up in the library one day, many years ago. It's the name of Merlin's foster mother in the books, who is a likeable character as well.
I checked just now and discovered that the trilogy is appparently a novelization of the 1998 mini-series Merlin, which I have never seen. Guess what I'm putting on my watchlist now? ;)

With that said, Ambrosia is too clunky for use in daily life. I always imagined that it would work as a full name for Rosa, which is a bit insubstantial by itself.
