I was at school with a girl called Zephne, short e, so Zephan seems like it would also be ZEF'n.

Rather than immediately presuming its derived from derangement of letters, perhaps you might consider such sources as Zephaniah or Zephaniel.
I like the Zeph part, but I prefer Zephyr to Zephan, which I'd pronounce ZEF-ən. Some middle names:

I would pronounce it ZEFF-an, so not really like either of your examples. I don't like the name, sorry.
