I think it’s lovely ;) I prefer Katrina, however, since it’s so close to my own name.
I like Kat and Katie as nicknames for Katrina and for Catrina, I’d go with the same ones just spelled with a C.
Of your options I like Catrina Bianca the best.
As for popularity. Katrine (with an e) is rather popular at the moment in Denmark and it gets a little boring that so many kids are called it. But it’s a decent enough name.
