I really dislike Carol, and spelling it Caryl doesn't make it any better in my opinion. Carol is so post World War II, which in and of itself doesn't make it bad, but you did ask if it was too baby boomer. I just don't like how it sounds, and it's also not very feminine, and the Caryl spelling makes it even less so.
I went to high school with a girl who spelled it Carrel, which I think makes it marginally better.
But I think if you want to use it as a middle name to honor your mother, you should just go right ahead and do so and not even worry about whether anyone else or even yourself likes it. I gave my daughter my mother's name as a middle name, it was a name I did not care for at all, and I've never regretted it.
