I am not sure about the pronunciation in the Middle Ages, but in modern German it would probably be FEH-meh and FEH-meh-keh.
Could you tell the source you are referring to? Neither FEME nor FEMEKE is listed in Seibicke's HDV (Historisches deutsches Vornamenbuch), but he has FEMKE. However he gives a totally different explanation: "Frisian child language form of names composed with the element fred"
