Sunniva, nn Sunny, would be terrific. It's not *too* Norwegian at all.

Sonya / Sonia (I know a woman who used this for her Sunny)

Alexandra (traditionally, Sunny is a nn for Alexandra)

Celeste (celestial = sunny, too cute?)

Apollonia / Apolline (Apollo is the sun god, so why not?)
