The ending -ot is a hypochoristic (affective diminutif) suffix in French: Pépin > Pépinot . Pépin comes from the Germanic name Pipin, from bib/pip, "to shake".
But Pépin and Pépinot has been used sporadicly also as nicknames of Joseph (I suppose because of the Italian Peppino and the Spanish Pepín).
