I prefer Katharine, sp with a second a.
I don't really like Catherine with C at all so I'd probably pick sp Katherine because of that. I also think all the nn look better with a K - Kate, Katie, Kat, Katya, Kathy, Kaye etc.
Catherine seems dated to me, whereas Katherine is quite modern and fresh. I knew a girl named Catherine and I hated her name, I thought it would be much better suited to a middle aged person. Then I met a girl who used sp Katherine and that changed my whole impression of the name.
