My mother did some research on the family name, and apparently it's taken from the surname de Gylpin. A notable person with this name was supposedly Bernard de Gylpin, who was supposed to have saved Henry VIII's life when he was attacked by a boar. This is partly proven by the fact the animal on the Gilpin coat of arms is a boar. I hope this helps :)
