Are we just getting 1 pet? I'm happy to get a horse, cat, dog or rabbit?

I'm definitely not thrilled with the idea of a horse, or a cat. I am not a cat person, and a horse is just... overkill. I'd honestly prefer a dog or a rabbit, but I'll leave the final decision to you. We can have both if you prefer.
