I love Margot. I do not think it is at all strange to use it with no French ancestry.
Of your combos, I like Margot Catherine the best.
I think perhaps Margo would be a better choice than Margot, though. I think in the U.S. at least, you would run into pronunciation and spelling issues with a lot of people if you used Margot.
