Florence is a pretty, dignified, gentle name. I picture an elderly lady who still wears a hat to church and has actual tea parties, but who also loves playing with her grandkids and working in her garden. I wouldn't use it as a first name, but I wouldn't rule out using it for a middle name.
Flossie sounds like a milk cow, or a slave. It just robs Florence of its dignity. Flo is sort of cute, in a noisy, wise-cracking waitress kind of way, but all in all I'd rather just see Florence with no nickname.
