I've known a lot of Sarah Katherine / Sarah Catherines, many who went by both names. Sarah Elizabeth was the most common Sarah combo of girls I knew (and I knew/know A LOT of Sarahs around my age - I'm a "grandmillenial" born 1985). Because Sarah was so common in my generation, I was sick of it for a long time. It seems like an oatmeal name, really plain and why would you have it when there are so many other wonderful options? But since I don't hear it as often anymore, it's a tad less boring. I can appreciate that the sound, Sair-uh, is pretty and soft. It's somewhat like Anna (but not as pretty IMO). Sarah Catherine is nice together. It's very traditional. I'd be tempted to use a more unusual middle name, though, to spice up Sarah.
