I like Rosita! It's Italian as well (obviously cognate from the Spanish one) and we pronounce it with a /z/ sound instead of the /s/ sound.
In 2021 It was used for 12 newborns and was ranked 876° among most popular names for newborns in Italy.
It is seen as one of the diminutives of Rosa: Rosina, Rosetta, Rosella ... And Rosita.
I prefer Rosetta over Rosita but I think that's a good name, at least less popular than others.

There's a lot of older Hispanic ladies that go by Rosita, so it's thoroughly a grandma name to me.
