Val as a nn for Valerie is OK; not wonderful, but not bad either. Valentine on either gender would surely lead to a lifetime of people asking about their birth date. And I've never enjoyed Valentine's Day: even worse than Christmas, which does have a deep meaning for Christians, St Valentine should actually be the patron saint of greedy shopkeepers.
